For the shrimp, we like to use the 31/40 size range (here is a great article on understanding shrimp sizes and types), but feel free to use whatever shrimp size you prefer. Of course, larger shrimp make take a little longer to air fry, and smaller my cook quicker. Different sized shrimp may also use more or less egg and bread crumbs (or other breading of choice). Adjust as needed. We barely season the shrimp with salt, because most shrimp usually have a natural saltiness to them, but adjust to your personal preference.

Ingredients
1lb.(454g)large shrimp, peeled and deveined
1teaspoon(5ml)oil
1/2teaspoon(2.5ml)garlic powder
1/4teaspoon(1.25ml)salt, or to taste
1/4teaspoon(1.25ml)black pepper, or to taste
1/3cup(42g)all-purpose flour
2eggs
3/4cup(80g)bread crumbs(or breading of choice) panko, crushed pork rinds, almond flour etc.
Rinse and pat dry the shrimp. Lightly oil the shrimp then season all sides with garlic powder, salt and pepper.
You’ll need 3 bowls: In first bowl, add the flour. In second bowl, whisk together eggs. In third bowl add bread crumbs. Coat shrimp in flour mixture, then dip in egg mixture, then coat the shrimp with bread crumbs.
Lay the coated shrimp in air fryer in a single layer (cook in batches if needed). Spray shrimp with oil, flip and spray other side to completely coat (make sure to coat both sides).
Air Fry at 380°F/193°C for 8 minutes. Flip the shrimp.
Continue to Air Fry at 380°F/193°C for another 2-6 minutes or until the crust is golden brown and shrimp is cooked through. Air frying time will vary depending on shrimp size. Serve with your favorite sauce.
