Different mustards will completely change the flavor. If you like it with a sharper zing, use the dijon. For more mild, use yellow mustard. And spicy brown settles nicely in-between. This recipe isn't overly sweet. If you like your sauce more sweet honey flavored, just amp up the amount of honey. If you want to make it vegan, substitute agave nectar or maple syrup for the honey and then call is a Agave or Maple Mustard Sauce. Makes nearly 1 cup of sauce.
