Cooking times will vary depending on the size of your avocado slices and the your air fryer. Start on the lowest suggested time, then add more time if needed to your personal liking.
In one bowl, beat the egg. In another bowl combine the 1/4 cup of breading and the 2 Tablespoons o fparmesan cheese.
Season with salt and pepper evenly over avocado. Coat the avocado with the beaten egg. Gently turn to coat evenly.
Dip the avocado in the breading/parmesan mix and shake off excess. Spray all sides of the coated avocado with oil spray. Dry coating might fly around in air fryer and burn, so make sure to coat any dry spots.
Spray air fryer basket/tray with oil or use a perforated silicone mat or perforated parchment paper, and place coated avocado wedges in a single even layer (air fry in batches if needed.)
Air Fry at 380°F/193°C for 5-8 minutes. Gently flip and spray any dry spots with oil spray.
Air Fry at 380°F/193°C for additional 2-5 minutes or until they are crispy golden brown. Serve warm with your favorite dip.
