What is Chimichurri Sauce?

Chimichurri sauce is a classic and popular sauce loved throughout Latin America and originated in Argentina. The sauce is not cooked and usually chopped to a fine texture or blended with a slightly coarse texture. It’s a combination of parsley, lemon, garlic and olive oil. Add a splash of vinegar or lemon juice to brighten it up and it’s a perfect everyday sauce that can be enjoyed on almost anything. It’s tangy, bright, herbal and should be in your fridge ready to go if you’re air frying lamb, beef or chicken recipes. It’s even great on air fryer vegetables.

Is Chimichurri like Pesto? Green Goddess Dressing?

Yes, it’s similar to both. Pesto has basil and cheese, but chimichurri does not. But it can have the same mouthfeel and texture and use. Chimichurri is more like a Green Goddess sauce but mainly with parsley. But that doesn’t mean you can’t use other herbs too. The main herb is parsley or cilantro in most cases.

Chimichurri Sauce

The chimichurri sauce is great on meats, veggies, as a salad dressing, or even on your morning eggs. The recipe is easy to double and does keep quite well in the fridge.

Ingredients

  • 1/4 cup olive oil
  • 1/3 cup minced fresh parsley or cilantro , or combination of both
  • 1-2 cloves garlic , minced or crushed
  • 1/4 teaspoon salt , or to taste
  • 1/4 teaspoon black pepper , to taste
  • 1-2 pinches red pepper flakes , or to taste
  • lemon zest
  • 1 Tablespoon lemon juice , or to taste

  • Finely mince the parsley or cilantro.

  • Combine the olive oil, parsley, garlic, salt, black pepper and red pepper flakes. Zest the lemon into the mix, then add the lemon juice.

  • Stir until well combined and taste for seasonings.

  • If you like it saltier, add more salt. Or more lemon for a brighter chimichurri sauce. Like it spicy? then add more chili flakes.

Storing Chimichurri

Because the ingredients are so fresh, they can easily turn brown if not used within about 5-6 days. After about 5 days we find that the sauce starts to get stale and the fresh herbs turn brown. So ideally, you should use up the sauce within a few days.
