Best air fryer corn bread recipe homemade 

If you love fresh warm cornbread then you will love air frying corn bread from scratch. With just a few ingredients we’ve developed a method that makes it simple and quick in the air fryer. 

Tips for How to make air fryer cornbread from scratch 

  • For smaller air fryers try to use the same accessory “bucket” pan that we did. This is the pan. It’s thin, light and deep enough to hold the volume of one jiffy cornbread box mix. We’ve tested several pans that fit the air fryer, but the timing that we have is based on this “bucket” pan.
  • Oven style, toaster style or larger air fryers can use this pan. This is the pan that we used for the larger oven-style air fryers. The minimal edges don’t get in the way like some other 8-inch pans do. It will also work in some of the larger basket-style air fryers.
  • Overmixing the cornbread batter will result in a tough corn bread. So stir and mix just enough until all ingredients are incorporated.
  • Don’t waste the batter: Using a rubber or silicone spatula is best because you can scrape the sides of the bowl during mixing. This will give you the best mix and won’t leave important ingredients on the sides of the bowl during mixing.
  • Oil the sides of the baking pans so the cornbread doesn’t stick. 
  • Different results: Some air fryer models vary with how hot they cook. So if you use a toothpick to check the cornbread and it still comes out a little wet, the cover the cornbread with foil. Continue cooking for a few minutes to get the cornbread cooked all the way through. The foil keeps the cornbread from drying out and burning on the top.

Why is my cornbread still raw in the center? 

  • Your air fryer probably cooks really hot. Or your pan might be too tall which makes for a thicker corn bread. Or it might be too high and close to the heating element. This can cause the cornbread to cook too fast on the outside and still raw on the inside.
  • That’s why we suggest turning off the air fryer keeping the corn bread in the hot air fryer to continue cooking. The residual heat of the air fryer will help continue cooking the center of the corn bread. 
  • Also did you use corn meal? Don’t be confused between corn meal, polenta and grits.

What to serve with air fried corn bread?

  • Have it for breakfast with eggs or serve it with a steak for dinner. It’s such a great side dish or quick bread made in the air fryer for anytime of day.

Baking Pans that are Perfect for Air Frying

We love these 8-inch square baking pans for air frying in oven-style air fryers as well as some larger basket-type air fryers. They don’t have bulky handles which will get in the way for some air fryers.

These style pans are perfect for basket-type air fryers. The handles make it so much easier to take out of the basket.

Homemade Corn Bread for Oven-Style Air Fryer

We have two recipes for two different style air fryers. A full 8” square baking pan can be cooked in most oven style air fryers. It will also fit in some of the larger basket-style air fryers, depending on the shape and sides of your pan and the dimensions of your air fryer basket. In the following recipe box, we have a small batch recipe for basket style air fryers that can accommodate an accessory cake bucket pan with handle.

Ingredients

  • 1 cup (160 g) cornmeal
  • 1 cup (125 g) all-purpose flour
  • 2/3 cup (135 g) sugar
  • 1 teaspoon (5 ml) salt , or to taste
  • 1 Tablespoon (15 ml) baking powder
  • 1 large egg
  • 1 cup (256 g) creamed corn
  • 1/3 cup (80 ml) vegetable oil

Serve with options:

  • Honey, Butter, or Jam

Instructions 

  • In bowl, stir to combine cornmeal, flour, sugar, salt, baking powder. Add egg, creamed corn, and oil. Stir until just combined.

  • Coat a 8×8 inch square baking pan with oil spray. Optional – cut and oil a piece of parchment paper to fit the bottom of your pan for easier release. Pour batter into baking pan.

  • Place baking pan on the lower rack in the air fryer. Air Fry at 360°F/180°C for 25-30 minutes. Insert a toothpick in center of corn bread and when it comes out clean, it’s done. If after 30 minutes the toothpick isn’t fully clean yet but the edges of the cornbread are crisp, then turn off the heat and leave corn bread in the air fryer for about 10 minutes to allow the residual heat to continue cooking the corn bread.

  • Allow to cool in the pan. It will release from the sides as it cools, making it easier to cut. Serve with honey, butter, or jam.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

Homemade Corn Bread for Bucket-Style Air Fryer

This timing is for a 6 qt. air fryer that fits the 7” cake bucket or 8” shallow pizza pan (not the 6.5” shallow pizza pan – it’s too small) from air fryer accessory kits. The more shallow the pan will cook a little better and is best to cook all the way through, but the 7" cake bucket is easier to get out of the air fryer basket.

  • 1/2 cup (90 g) cornmeal
  • 1/2 cup (63 g) all-purpose flour
  • 1/3 cup (67 g) sugar
  • 1/2 teaspoon (2.5 ml) salt
  • 2 teaspoons (10 ml) baking powder
  • 1 large egg
  • 1/2 cup (128 g) creamed corn
  • 2 Tablespoons (30 ml) oil

Serve with Options:

  • Honey, butter, or jam

  • In bowl, stir to combine cornmeal, flour, sugar, salt, baking powder. Add egg, creamed corn and oil. Stir until just combined.

  • Lightly coat your baking pan with oil spray. Optional – cut and oil a piece of parchment paper to fit the bottom of your pan for easier release. Fill the pan with the batter.

  • Air Fry at 320°F/160°C for 18-22 minutes. Insert a toothpick in center of corn bread and when it comes out clean, it’s done. If after 22 minutes the toothpick isn’t fully clean yet but the edges of the cornbread are crisp, then turn off the heat and leave corn bread in the air fryer for about 10 minutes to allow the residual heat to continue cooking the corn bread.
