There’s two main reasons why you need to immediately make these air fryer keto cauliflower bites. One is that they are crazy easy to make. And two: they are crazy good! The crispy texture of these bites are fantastic and addicting to eat. We inhaled the first test batch and it was so hard to not eat all of the other test batches of crispy cauliflower.

Keto Friendly Coatings and Breadings

There’s several different keto friendly coatings to use instead of regular bread crumbs. All are a little different and can suit different dietary lifestyles.

  • Crushed pork rinds. These are probably the most common and popular. They give a light flavoring of pork, so if love this flavor it’s perfect for you. You can buy keto pork rinds that are pre-crushed and ready to use. Or you can buy a bag of pork rinds and then grind them in your food processor. This option allows you to customize the grind of your pork rinds. You can make the coating find or more coarse/crunchy.
  • Grated Parmesan Cheese: the flavor of cheese can’t be beat! The air fryer will cook these to a nice crispy outside texture.
  • Almond flour is another popular option. It’s also vegan and plant based friendly too. But if you don’t use enough oil spray on the outside of the almond flour, the crust can be rather mushy and dry. So make sure to be liberal on the oil spray.
  • Sesame seeds are another option. You’ll get a great flavor of sesame on cauliflower. This is another good plant based coating option that’s keto friendly. But if you’re allergic to sesame seeds, then stay away!

Tips on Making Keto Air Fryer Cauliflower Bites Recipe

  • Be consistent on the size of cauliflower that you cut. Don’t cut the cauliflower bites too large. Try to keep them to about 1? bite sized pieces.
  • Season the cauliflower for best flavor. Don’t skimp on the salt and spices. Try lemon pepper seasoning, paprika, cajun spices, Montreal steak seasoning or any of your favorite spices. You don’t want to have bland cauliflower bites.
  • Single layer for best even cooking. Make sure to lay the cauliflower in a single layer during air frying. This will give best crispy texture evenly on all the bites. If needed, cook them in batches.
  • Think of all the different types of dips that you can serve! The possibilities are endless: hot sauce, bbq sauce, ranch, cheese dip, peanut sauce.

Crispy Keto Air Fryer Cauliflower Bites

Cooking times will vary depending on how big you cut the cauliflower florets and on your specific air fryer. Start on the lowest suggested time, then add more time if needed to your personal liking. One egg should be enough if you stir and soak the cauliflower in the egg at the bottom of the bowl. But if you feel like you need more, then use 2 large eggs.

Ingredients

  • 1/2 pound (227 g) fresh cauliflower
  • 1/2 teaspoon (2.5 ml) salt , or to taste
  • black pepper , preferably fresh ground
  • 1/2 teaspoon (2.5 ml) garlic powder
  • Optional Seasonings: Lemon pepper seasoning, paprika, cajun spices, Montreal steak seasoning, etc
  • 1 egg , beaten
  • 1/2 cup (54 g) crushed pork rinds (or almond flour)
  • 2 Tablespoons (30 ml) grated parmesan cheese
  • Optional Dips: hot sauce, ranch, bbq sauce, etc.

Instructions 

  • Cut cauliflower into bite sized florets.

  • Pre-heat air fryer at 360°F/182°C for about 5 minutes.

  • Toss the cauliflower florets with the seasonings (salt, pepper, and garlic powder and/or any other optional seasoning you prefer). Add beaten egg and stir to coat the cauliflower.

  • Combine the crushed pork rinds (or almond flour) and parmesan cheese in a bowl.

  • Dip cauliflower florets in the coating mix and gently shake off excess coating.

  • Spray all sides of the coated cauliflower with oil spray. Dry coating might fly around in air fryer and burn, so make sure to coat any dry spots.

  • Spray air fryer basket/tray with oil (or line with a perforated silicone mat or parchment paper) and place cauliflower in a single layer in the basket/tray.

  • Air Fry at 360°F/182°C for 8 minutes. Gently flip and spray any dry spots with oil spray.

  • Air Fry at 360°F/182°C for additional 3-5 minutes or until they are crispy golden brown OR to your preferred texture. Serve warm with your favorite dip.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

Can you use Frozen Cauliflower?

Honestly, don’t even try frozen cauliflower if you can get your hands on the fresh stuff. Frozen cauliflower is watery and mushy and you won’t get the same crunch and crisp. It can easily get mushy and totally ruin the eating experience. We’re fans of buying fresh cauliflower. You can even find the fresh cauliflower that’s already prepped and cut for you. As far as cost effectiveness, you get more for your money if you buy the fresh stuff. These keto air fryer cauliflower bites are just so much tastier with the fresh.

Freezing leftovers

Don’t do it! It’s not worth it to freeze any leftovers because the recipe isn’t too big of a batch. Besides, freezing the cauliflower bites then thawing them to re-heat just makes them more mushy. So just try to eat it within 3 days and store it in the fridge. Or share it with the mail man, UPS delivery person or with your neighbors. Sharing is caring!
