Vegan Air Fryer Butternut Squash Fajitas

This squash is such a fantastic vegetable to air fry. It’s vegetarian, vegan and loaded with vitamins. Cutting it up into small chunks has several advantages: it cooks quick, soft on the inside yet slightly crispy on the outside. The level of crispy-ness all depends on how long you air fry the butternut squash for. But what ever level of timing you choose, the flavors are fantastic and perfect for so many dishes.

Tips on Air Frying Butternut squash

  • If you’re using fresh squash, make sure to cut everything evenly. If there’s small chunks and large chunks, you’ll have a batch of soft and firm pieces. So to ensure that you get as much even cooking as possible for fresh butternut, keep the cuts consistently the same size.
  • Some squashes are huge and if you have a small air fryer, it’s going to take multiple batches to cook all the squash. Try to keep the squash in a single layer as much as possible to make sure everything cooks evenly.
  • The seasonings we have for the fajitas is totally customizable. Add or deduct what ever you like for the seasoning.

Air Fryer Butternut Squash Fajitas

The cut size of squash is important. Time is approximate and depends on the size you cut the squash. If it’s smaller and crisps up faster, then don’t use the whole cooking time. If your air fryer is smaller, cook this in batche

Ingredients

  • 1 small butternut squash (1.5 pounds (680g)), peeled and cut into 1/2” cubes
  • 1 small onion , sliced thick
  • 1 small bell pepper , sliced
  • 2 Tablespoons (30 ml) vegetable oil
  • 3 cloves garlic , minced
  • 1 teaspoon (5 ml) salt , or to taste
  • 1 Tablespoon (15 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) chili powder
  • 1/2 teaspoon (2.5 ml) ground cumin
  • 1/4 cup (60 ml) chopped cilantro , optional

For Serving (choose your favorites)

  • 12 Tortillas , fajita sized (about 5-6" usually)
  • Pico de gallo/salsa, shredded cabbage, cheese, lettuce, limes, etc.

Equipment

Instructions 

  • In a large bowl, whisk together 2 Tablespoons (30ml) oil, minced garlic, 1 teaspoon (5ml) salt, 1 Tablespoon (15ml) Worcestershire sauce, 1 teaspoon (5ml) chili powder and 1/2 teaspoon (2.5ml) cumin. Add squash, onions and bell pepper. Toss to coat all vegetables.

  • Put seasoned vegetables to air fryer basket/tray (if you have a small air fryer, cook in batches). Spread out evenly.

  • Air Fry at 380°F (193°C) for 15 minutes, then shake and turn the squash.

  • Continue Air Frying the squash at 380°F (193°C) for 5-15 minutes or until the squash is tender and has crispy edges.

  • When squash mixture cools, toss with the optional chopped cilantro. Serve with warmed tortillas and your favorite toppings.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

Can you use frozen butternut squash?

Sure you can, but frozen butternut squash cooks faster than fresh. So if you want to cook the frozen squash separate from the onions and peppers, it might be best. That way the squash doesn’t get too soft by the time the onions and peppers get cooked. Or you can cut the onions and peppers smaller so that they cook faster. Also, air frying frozen squash can result in slightly mushy textures. There’s a lot of moisture releasing from frozen squash so they might not be as crispy on the edges.
