Bacon-Wrapped Zucchini in Air Fryer
We had some extra zucchini and bacon so do you know what that means? Making bacon-wrapped zucchini in the air fryer! This low carb and GLP-1 friendly keto recipe is great when you’re looking to eat nutrient rich and satisfying food.

Low carb Zucchini with Bacon
Previously we made air fryer bacon wrapped zucchini fries that were great bite sized treats. But we used another technique that was a little easier without having to use toothpicks. Using a thicker cut zucchini. This time the thick cut zucchini wedges were easier to work with and easier to wrap with bacon. And the bacon stayed nicely in place for almost all the zucchini. The results? Super delicious!

Bacon Wrapped Zucchini in Air Fryer
Ingredients
- 2 small zucchini or summer squash
- 4 slices bacon
- fresh cracked black pepper , to taste
- oil spray or brush of oil
Equipment
- Oil Sprayer , optional
Instructions
- Slice ends of zucchini then slice lengthwise about 1/2" thick.

- Wrap each strip of zucchini with bacon.

- Sprinkle black pepper over the bacon and zucchini

- Place zucchini in air fryer basket. Try to not have them touching or else the bacon that is touching might not crisp up.

- Air Fry at 380°F for 10-16 minutes or until the bacon is crispy to your liking. Allow to cool for a couple minutes before serving (zucchini will be very hot).

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).
