High Protein Lamb Patties in Air Fryer

Herbs and Spices in the Lamb Patties
We love adding fresh herbs and spices to the meat patty mix. We love making juicy air fryer greek burgers are so much more flavorful when you add some fresh chopped herbs like mint and rosemary. If you want to keep it simple without the herbs, then go for it. But honestly, the fragrant flavors of the herbs take these lamb burger patties to a whole new level. And if you can get your hands on the fresh herbs, you’ll realize it’s hard to go back to dried herbs. If all you have at the moment are dried herbs, then those can work too but for the mint, it should be fresh.

Lamb Patties in Air Fryer
Ingredients
For the Lamb Patties
- 1 pound (454 g) ground lamb
- 2-3 cloves garlic , minced
- 1-2 teaspoons (5-10 ml) chopped fresh rosemary
- 2 Tablespoons (30 ml) chopped fresh mint
- 1/2 teaspoon (2.5) ground cumin
- 1/4 teaspoon (1.25 ml) salt , plus more for seasoning outside of patties
- fresh cracked black pepper , to taste
- olive oil or oil spray , for coating
For Optional Tzatziki Dip
- 1/2 cup (100 g) greek yogurt
- 2 teaspoons (10 ml) olive oil
- 1/4 cup (35 g) minced cucumber , seeds removed
- 1 teaspoon (5 ml) chopped fresh mint
- 1 teaspoon (5 ml) chopped fresh dill or 1/2 teaspoon dried dill
- Zest of 1/2 medium lemon , optional
- 1 teaspoon (5 ml) lemon juice , optional
- 1/4 teaspoon (1.25 ml) garlic powder
- 1/4 teaspoon (1.25 ml) salt , or to taste
- black pepper , to taste

Instructions
- Make the lamb patties: In bowl, combine 1 pound of ground lamb, minced garlic, 1-2 teaspoons chopped rosemary, 2 Tablespoons chopped mint, 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and black pepper to taste. Stir the mixture to combine all the spices.

- Lightly oil your hands and divide the meat mixture into 3-4 patties. Gently flatten into patties (don't overwork the meat mixture forming the patties-best to have it rough looking and tender than perfectly formed and tough). Lightly coat with olive oil or oil spray.

- Season the patties with additional salt and pepper to your preference (it's nice have additional seasoning on the outside of the patties besides the salt and pepper that goes into the meat mixture – the initial meat mixture is intentionally slightly under salted so when you season it now, the patties will have a nice saltiness).

- Preheat air fryer at 400°F/205°C for 5 minutes.

- Air Fry: Spray the air fryer basket/tray with oil.

- Place the lamb patties in the air fryer in a single layer.

- Air Fry at 400°F/205°C for 5 minutes. Turn the patties. If they seem dry at all, spray with additional oil spray if needed.

- Finish Air Frying at 400°F/205°C for 2-6 minutes, or until cooked to your liking. Remove the patties from the air fryer and enjoy!

- If you're making the tzatziki sauce: Combine all the dip ingredients (1/2 cup yogurt, 2 teaspoons olive oil, 1/4 cup cucumber, 1 teaspoon chopped mint, 1 teaspoon chopped dill, lemon zest (optional), 1 teaspoon lemon juice (optional), 1/4 teaspoon garlic powder, 1/4 teaspoon salt, and black pepper to taste) in a bowl.

- Stir to combine everything well. If it is thicker than you prefer, thin the sauce with a little milk, sour cream or even water to get a consistency you like. Cover and chill in the fridge until ready to serve with the patties.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

Tzatziki Sauce for Greek Lamb Burgers in the Air Fryer
